Blueberry Mascarpone Cheesecake!!!!

When there was a main dish...there should have dessert as well, rite?

terima kasih sahabat kerana mencuba resepi2 experiment ku ;) u know who u are ..lol !!

Just want to try out something new ... tadaaaa... Mascarpone cheesecake!!!

before this, i have baked cheesecakes with Philadelphia cream cheese, but now i want to try it with Mascarpone cheese instead...

so, let see..the ingredients for 28cm spring are :

Top:
500g Mascarpone cheese
300g Sour cream

7-8 eggs

2 spoon lemon juice
1 tea spoon vanilla essence
2 cups castor sugar/ puder sugar

2 bottle sweetened wild blueberry (if you like, u can use more)

Base:
1 packet double layer biscuits with chocolates filling(Prinzen/Prince)
1 cup brown sugar
100g melted butter


Heat the oven up to (170°)

For the base:
  • Use dry blender and blend biscuits and brown sugar all together until half fine crumbs.
  • Add melted butter into biscuits crumbs and mix until moist crumbs form.
  • Press the crumb mixture onto the bottom of the prepared spring form (not on the sides of the spring form). Bake the crust about 5-10 minutes(until it begins to brown).Set aside.

For the topping:
  • Using an electric mixer, beat the mascarpone cheese, sour cream and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula.
  • Beat in a bottle wild blueberry, lemon juice and vanilla. Add the eggs, 1 at a time,continue mixing until smooth.
  • Pour another bottle wild blueberry over the base. Then pour the cheese mixture over the wild blueberry and put in the oven up to 55 minutes.
  • Let it cool ..preferable 30 minutes on the table then overnight in the fridge ;)
